Bee's Knees

Gin, lemon, and honey syrup, shaken hard. Three ingredients, so the honey is the whole adjustment, and the usual ¾ oz. is too much.

Two pale yellow Bee's Knees in speckled colored-glass martini glasses on a wooden table

Method

  1. Add the gin, lemon juice, and honey syrup to a shaker with ice.

  2. Shake hard until the tin is too cold to hold comfortably, then strain into a chilled glass.

  3. Drop in a lemon wheel.

Notes from the line

The classic calls for ¾ oz. honey syrup. I find that too sweet; ½ oz. lets the gin through.

Honey syrup is equal parts honey and warm water, stirred until it loosens. Straight honey seizes on contact with ice.
