Sunday Morning Pancakes
The pancakes we make every weekend, worked out over a lot of Sundays.
Ingredients
Batter
- 2 cups all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1 3/4 cups buttermilk
- 3 tbsp butter, melted
To serve
- Maple syrup
- Butter
Instructions
- Whisk the flour, sugar, baking powder, and salt together in a large bowl.
- In a second bowl, beat the eggs into the buttermilk, then stir in the melted butter.
- Pour the wet into the dry and fold until just combined. Lumps are fine; overmixing is not.
- Rest the batter 10 minutes while the griddle heats to medium.
- Cook 1/4-cup portions until bubbles hold their shape, about 2 minutes, then flip and cook 1 more.
Notes
The rest is the part people skip. Don't skip it.
These started as a way to get everyone at the table on a Sunday and turned into the thing the kids ask for by name.
